Healthy taco shells made with carrots, shall we talk about that ??
Seriously, I have to admit that I would never had the idea to create a healthy taco shell using carrots if diabetes did not came after my pregnancy. I was more like a BIG bread fan and I bought tons of ready made taco shells, tortillas and all crap finger food from the store. But well, that was BEFORE and thanks GOD I am now on the clean eating path and feel super healthy. Well, I never give up on my LOVE of finger food : pizza, tacos and burgers are still on my menu each week BUT I am now creating healthy finger food that is actually good for my body. SO if you are like me – a finger food lover – but you need to cut on carbs and boost your veggie intake do not go further this carrot taco shell is for you!
Carrot taco Shells healthy 4-ingredients recipe
SO now you probably want to ask me if it is a difficult recipe? HELL NO! Should I remind you that I have got an excited years old little girl on my feet all day – yes she don’t go for a nap anymore – so I don’t have time for long or complex healty recipes. You will never find those recipes on my blog. I am all into HEALTHY + SIMPLE + TASTY (AND FUN). SO, all you need to make those soft carrot taco shells are 4 ingredients (or 5 if you add salt). I used a mix of grated carrot that I lightly cooked in water for 5 minutes in my microwave until the veggie get soft and tender. ALERT! This is very important that you squeeze out all the extra water from the cooked carrots before combining with grated cheese and oat flour or it n’t work. I simply used some absorbent paper to dry out the cooked grated carrot but a clean towel will work well too well, if you are okay to color your towel in orange !! ahaha YEP! I did it and the towel is now used in my girl playroom for painting activities.
NEXT, you often ask me “Carine, what I can I do if I don’t have oat bran or if I eat gluten ? ” NO problem, I et you covered guys! This recipe works with almond meal too – almond flour/ground almonds heck! why people use so many different words for the same ingredient ???! it is way simple in French! Whatever those carrot taco shells are BOMB ! It is soft in the middle and crispy on the sides – even more when cooling down. My tips to create the most beautiful taco shells is to cool them on a beer bottle – any kind of bottle will work I just like a light beer on taco night! 🙂 This process give them a perfect taco shell shape plus it will avoid them to crack when filled. OH and YES!
I drink beer sometimes even if I had diabetes and it did not kill me – well, I prefer red wine as a French girl but sometimes a cold beer is refreshing! I don’t believe in strict diet – it never worked for me, I never lost a pound or fix my diabetes with diet. BUT since I simply eat clean 80% of the week and indulge 20% of the time I lost 6 pounds, reversed my diabetes and feel amazing. So YES each weekend I will have some less healthy food and it is what makes me happy and keep me healthy. You see, another reason to make those carrot taco shells to enjoy a beer ahaha!
I stuffed my carrot taco with green salad, sprouts, grilled chicken and a drizzle of home made olive oil mayonnaise. Of course any regular taco filling will work very well with this recipe. I have always been a big fan of diced grilled beef in my tacos with red onion and capsicum and that is my other option. I love this recipe for dinner. It is simple, low carb and full of good complex carbs! I made 4 medium size taco shell of about 15 cm (6 inch) diameter.

I usually do not provide nutritional information on this blog because my food philosophy is not based on counting calories or carbs. I do not prone a particular diet because I simply believe that any food you made home using natural and unrefined ingredients make a more nourishing and satisfying dinner meaning you eat less and you feel full for longer.
Those taco shells are made with the simplest ingredients carrots, free range eggs, gluten free oat flour rich in fibre and low fat cheese. Compared to commercial brand this recipe contains slightly less calories (110 calories/shell) BUT what you have to look at is the quality of the calories in a recipe. In this recipe the calories are made of lots of protein (7 g/ per shell compared to 1 g in the commercial brand). It is seven times more protein or we know that protein are very satisfying meaning you eat less while building muscle. The amount of net carbs is 6.5 g/taco shell as each taco shell contains 2.5 g of fibre per shell. Again, a commercial taco contain 13 g of carbs which does not seems ‘like a big number’ but if you look at the break down the amount of fibre is 2.5 times LESS than those carrot shells.
It is because this carrot taco shell recipe is using good complex carbs from nutrient dense flour : gluten free oat flour. Finally, the fat per taco shell is 3 g slightly under the commercial brand (usually 4g). Calculation has been made with regular grated edam cheese so you may want to use low fa cheese to decrease the fat content. For those on Weight Watchers program the number of point per tacos is 2.
